This recipe for
Devils on Horseback is a great way to prepare stuffed bacon rolls for informal entertaining or to eat cold with a picnic. If you are worried about seeing "fresh breadcrumbs" don't! It just means rub the soft part of a slice of bread in your fingers till it crumbles very finely.
How to make Devils on Horseback Recipe:
Peel and finely chop the onion. Melt the butter in a pan and fry the onion gently it is soft and translucent (about 10 minutes). Stir in the sage and the breadcrumbs then use this mixture to stuff the prunes (you're just filling the space where the stone came from).
Stretch the bacon a little using the back of a knife, then cut them in two and use each piece to wrap round a prune. Secure the bacon with a wooden cocktail stick then grill for about 4-5 minutes on each side until the bacon is crisp.
GRAHAM'S HOT TIP
If you have a food processor, you can use the chopper to make breadcrumbs. I personally use a baby's food liquidiser (it's just the chopper mechanism!). I throw in the white of the bread, press the button and, five seconds later I have as many breadcrumbs as I can use!
